Ingredients

For the Strawberry Filling:

  • 4 cups fresh strawberries hulled and sliced
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter melted
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish.
  • Prepare the filling: In a mixing bowl, combine sliced strawberries, sugar, cornstarch, vanilla extract, and lemon juice. Stir until the strawberries are well coated, then pour the mixture into the prepared baking dish.
  • Make the topping: In another bowl, whisk together flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla extract. Stir until a smooth batter forms.
  • Assemble the cobbler: Spoon the batter evenly over the strawberry filling. It doesn’t need to cover everything completely, as it will spread while baking.
  • Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbling. Let cool slightly before serving.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
