For the Strawberry Filling:
- 4 cups fresh strawberries hulled and sliced
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
For the Cobbler Topping:
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter melted
- ½ cup milk
- 1 teaspoon vanilla extract
Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish.
Prepare the filling: In a mixing bowl, combine sliced strawberries, sugar, cornstarch, vanilla extract, and lemon juice. Stir until the strawberries are well coated, then pour the mixture into the prepared baking dish.
Make the topping: In another bowl, whisk together flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla extract. Stir until a smooth batter forms.
Assemble the cobbler: Spoon the batter evenly over the strawberry filling. It doesn’t need to cover everything completely, as it will spread while baking.
Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbling. Let cool slightly before serving.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
