  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips semi-sweet or dark
  • 1/2 cup fresh or freeze-dried raspberries

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until fully combined.
  • Gradually mix in the dry ingredients until just combined.
  • Gently fold in the chocolate chips and raspberries, being careful not to crush the berries too much.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
