Heat a large skillet over medium heat and add olive oil.
Add the diced onions and bell pepper, sautéing until soft (about 3 minutes). Stir in the garlic and cook for another 30 seconds.
Add the ground turkey and cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes). Season with smoked paprika, cumin, chili powder, salt, and pepper.
Stir in the diced sweet potatoes and pour in the chicken broth. Cover and let simmer for 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
Remove the lid and stir in the chopped spinach or kale, cooking for another 2 minutes until wilted.
Remove from heat, garnish with parsley, avocado slices, or a squeeze of lime, and serve warm.
