One-Pan Ground Turkey Sweet Potato Skillet

Ingredients
  

  • 1 lb ground turkey
  • 2 medium sweet potatoes peeled and diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 bell pepper chopped (any color)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 2 cups spinach or kale chopped
  • Optional: fresh parsley avocado, or a squeeze of lime for garnish

Instructions
 

  • Heat a large skillet over medium heat and add olive oil.
  • Add the diced onions and bell pepper, sautéing until soft (about 3 minutes). Stir in the garlic and cook for another 30 seconds.
  • Add the ground turkey and cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes). Season with smoked paprika, cumin, chili powder, salt, and pepper.
  • Stir in the diced sweet potatoes and pour in the chicken broth. Cover and let simmer for 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
  • Remove the lid and stir in the chopped spinach or kale, cooking for another 2 minutes until wilted.
  • Remove from heat, garnish with parsley, avocado slices, or a squeeze of lime, and serve warm.
