- 1 lb 450g salmon fillets, skin removed, cut into bite-sized cubes

Prepare the Salmon:Pat the salmon cubes dry with paper towels and season lightly with salt and black pepper. Heat the Pan:In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the salmon cubes in a single layer. Cook for 2-3 minutes on each side, or until lightly golden and just cooked through. Remove the salmon from the pan and set aside. Make the Sauce:In the same skillet, add the remaining 1 tablespoon of olive oil, garlic, soy sauce, honey, and lemon juice. Stir well and let it simmer for 1-2 minutes, or until the sauce begins to thicken slightly. Coat the Salmon:Return the salmon bites to the skillet and toss them gently in the sauce to coat. Cook for another 2-3 minutes, allowing the sauce to caramelize and stick to the salmon. Garnish and Serve:Remove the skillet from heat. Sprinkle sesame seeds and chopped green onions over the salmon bites, if desired. Serve immediately with your choice of sides.
- Adjust the sweetness or saltiness of the sauce by tweaking the honey and soy sauce ratios.
- If the sauce reduces too much, add a tablespoon of water to loosen it up.
