- 2 cups fresh strawberries hulled and sliced
- 3 tbsp granulated sugar adjust to taste
- 1 tsp vanilla extract
- 1 cup heavy whipping cream chilled
- 1 tsp unflavored gelatin optional, for extra stability
- 2 tbsp water if using gelatin
- 1 can whip cream optional topping
Prepare the Strawberries: In a blender or food processor, puree the strawberries until smooth. If you prefer a silkier mousse, strain the puree through a fine-mesh sieve to remove the seeds.
Sweeten and Flavor: Add sugar and vanilla extract to the strawberry puree, stirring well to combine. If using gelatin, dissolve it in 2 tbsp of warm water, then mix it into the puree.
Whip the Cream: In a separate bowl, beat the heavy whipping cream with an electric mixer until stiff peaks form. Be careful not to overwhip.
Fold Together: Gently fold the strawberry mixture into the whipped cream using a spatula until fully incorporated and fluffy.
Chill and Serve: Spoon the mousse into serving glasses or ramekins, then refrigerate for at least 1 hour before serving. Garnish with fresh strawberries, mint leaves, or a dollop of whipped cream.
