Ingredients
  

  • 2 lbs boneless skinless chicken thighs (or breasts)
  • 1/2 cup bourbon
  • 1/2 cup soy sauce low sodium recommended
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 3 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper flakes optional, for heat
  • 1 tablespoon cornstarch for thickening
  • 2 tablespoons water
  • Green onions and sesame seeds for garnish

Instructions
 

  • Place the chicken thighs in the bottom of your slow cooker.
  • In a mixing bowl, whisk together bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, and red pepper flakes. Pour over the chicken.
  • Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until the chicken is tender and fully cooked.
  • Remove the chicken and shred it using two forks.
  • In a small bowl, mix cornstarch and water to create a slurry. Stir it into the sauce in the slow cooker and let it thicken for about 10 minutes on HIGH.
  • Return the shredded chicken to the pot and stir to coat in the thickened sauce.
  • Serve over rice, garnished with green onions and sesame seeds.
