- 2 lbs boneless skinless chicken thighs (or breasts)
- 1/2 cup bourbon
- 1/2 cup soy sauce low sodium recommended
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup apple cider vinegar
- 3 cloves garlic minced
- 1 teaspoon ground ginger
- 1/2 teaspoon crushed red pepper flakes optional, for heat
- 1 tablespoon cornstarch for thickening
- 2 tablespoons water
- Green onions and sesame seeds for garnish
Place the chicken thighs in the bottom of your slow cooker.
In a mixing bowl, whisk together bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, and red pepper flakes. Pour over the chicken.
Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until the chicken is tender and fully cooked.
Remove the chicken and shred it using two forks.
In a small bowl, mix cornstarch and water to create a slurry. Stir it into the sauce in the slow cooker and let it thicken for about 10 minutes on HIGH.
Return the shredded chicken to the pot and stir to coat in the thickened sauce.
Serve over rice, garnished with green onions and sesame seeds.
