  • 2 tbsp butter or olive oil
  • 1 small onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 2 cups cooked chicken shredded
  • 4 cups chicken broth
  • 1 cup heavy cream or half and half
  • 1 lb potato gnocchi
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp crushed red pepper flakes optional for heat
  • 2 cups fresh spinach chopped
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Sauté the Aromatics: In a large pot over medium heat, melt butter. Add onion, carrots, and celery. Sauté for 3-4 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.
  • Add the Chicken & Broth: Pour in the chicken broth and add the shredded chicken. Stir in Italian seasoning, salt, pepper, and red pepper flakes if using. Bring to a gentle simmer.
  • Cook the Gnocchi: Add the gnocchi to the soup and let it cook according to the package instructions, typically around 3-5 minutes, until tender.
  • Make it Creamy: Lower the heat and stir in the heavy cream and Parmesan cheese. Allow it to heat through without boiling.
  • Finish with Spinach: Stir in the chopped spinach and let it wilt for 1-2 minutes. Taste and adjust seasoning if necessary.
