- 2 tbsp butter or olive oil
- 1 small onion diced
- 2 carrots diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 2 cups cooked chicken shredded
- 4 cups chicken broth
- 1 cup heavy cream or half and half
- 1 lb potato gnocchi
- 1 tsp Italian seasoning
- 1/2 tsp salt or to taste
- 1/2 tsp black pepper
- 1/2 tsp crushed red pepper flakes optional for heat
- 2 cups fresh spinach chopped
- 1/2 cup grated Parmesan cheese
Sauté the Aromatics: In a large pot over medium heat, melt butter. Add onion, carrots, and celery. Sauté for 3-4 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.
Add the Chicken & Broth: Pour in the chicken broth and add the shredded chicken. Stir in Italian seasoning, salt, pepper, and red pepper flakes if using. Bring to a gentle simmer.
Cook the Gnocchi: Add the gnocchi to the soup and let it cook according to the package instructions, typically around 3-5 minutes, until tender.
Make it Creamy: Lower the heat and stir in the heavy cream and Parmesan cheese. Allow it to heat through without boiling.
Finish with Spinach: Stir in the chopped spinach and let it wilt for 1-2 minutes. Taste and adjust seasoning if necessary.
Serve & Enjoy: Ladle the soup into bowls and top with extra Parmesan if desired. Serve warm with crusty bread or a fresh salad.
