Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley or cilantro chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder optional
  • 1/4 teaspoon red pepper flakes optional, for a bit of heat

Instructions
 

  • In a large mixing bowl, combine the cottage cheese and drained chickpeas. Stir well to coat the chickpeas with the creamy cottage cheese.
  • Add the cucumber, red onion, and fresh parsley. Mix everything together gently.
  • Drizzle with olive oil, lemon juice, and red wine vinegar, then season with salt, black pepper, and garlic powder (if using). Toss well to combine.
  • Sprinkle red pepper flakes for a bit of spice if desired. Serve immediately or refrigerate for up to 2 days for enhanced flavors.
