Cottage Cheese and Chickpea Salad

Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley or cilantro chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder optional
  • 1/4 teaspoon red pepper flakes optional, for a bit of heat

Method
 

  1. In a large mixing bowl, combine the cottage cheese and drained chickpeas. Stir well to coat the chickpeas with the creamy cottage cheese.
  2. Add the cucumber, red onion, and fresh parsley. Mix everything together gently.
  3. Drizzle with olive oil, lemon juice, and red wine vinegar, then season with salt, black pepper, and garlic powder (if using). Toss well to combine.
  4. Sprinkle red pepper flakes for a bit of spice if desired. Serve immediately or refrigerate for up to 2 days for enhanced flavors.
