Cook the Sausage: Heat the olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 3–4 minutes. Remove from the skillet and set aside.
Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Cook for 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
Add Seasonings & Rice: Stir in the smoked paprika, Cajun seasoning, dried oregano, salt, and black pepper. Then, add the rice and mix well to coat the grains with the seasonings.
Simmer: Pour in the chicken broth and diced tomatoes (with their juices). Stir everything together, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until the rice is tender and most of the liquid is absorbed.
Add Final Touches: Stir the cooked sausage back into the skillet along with the frozen peas, if using. Cook for another 2–3 minutes until everything is heated through.
Garnish & Serve: Remove from heat and sprinkle with sliced green onions. Serve hot and enjoy!
