Cajun Sausage and Rice Skillet (30-Minute Meal!)

Ingredients
  

  • 1 tablespoon olive oil
  • 12 ounces smoked sausage sliced (Andouille, Kielbasa, or your favorite)
  • 1 small onion diced
  • 1 bell pepper diced (red, green, or yellow)
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning adjust to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1/2 cup frozen peas optional
  • 2 green onions sliced (for garnish)

Method
 

  1. Cook the Sausage: Heat the olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 3–4 minutes. Remove from the skillet and set aside.
  2. Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Cook for 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add Seasonings & Rice: Stir in the smoked paprika, Cajun seasoning, dried oregano, salt, and black pepper. Then, add the rice and mix well to coat the grains with the seasonings.
  4. Simmer: Pour in the chicken broth and diced tomatoes (with their juices). Stir everything together, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until the rice is tender and most of the liquid is absorbed.
  5. Add Final Touches: Stir the cooked sausage back into the skillet along with the frozen peas, if using. Cook for another 2–3 minutes until everything is heated through.
  6. Garnish & Serve: Remove from heat and sprinkle with sliced green onions. Serve hot and enjoy!
