10oz300 g pasta of your choice (penne, rigatoni, or spaghetti work well)
1/4cupfresh basil leaveschopped
Instructions
Preheat the oven to 400°F (200°C).
Prepare the baking dish:In a medium-sized baking dish, arrange the block of feta cheese in the center. Surround it with the cherry tomatoes and garlic cloves.
Season the dish:Drizzle the olive oil over the feta, tomatoes, and garlic. Sprinkle with oregano, red pepper flakes (if using), and a pinch of salt and pepper. Toss the tomatoes gently to coat.
Bake:Place the dish in the oven and bake for 30–35 minutes, or until the tomatoes are bursting and slightly caramelized, and the feta is soft and golden.
Cook the pasta:While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.
Mix the sauce:Remove the baking dish from the oven. Use a fork to mash the feta and tomatoes together, creating a creamy sauce. Add the cooked pasta and toss until fully coated. If the sauce is too thick, stir in a bit of the reserved pasta water.
Finish and serve:Stir in the fresh basil, adjust seasoning if needed, and serve immediately.
