Baked Feta Pasta Recipe

Ingredients
  

  • 8 oz 225 g block of feta cheese
  • 2 pints cherry or grape tomatoes
  • 3 –4 cloves garlic peeled and left whole
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes optional
  • Salt and pepper to taste
  • 10 oz 300 g pasta of your choice (penne, rigatoni, or spaghetti work well)
  • 1/4 cup fresh basil leaves chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Prepare the baking dish:
    In a medium-sized baking dish, arrange the block of feta cheese in the center. Surround it with the cherry tomatoes and garlic cloves.
  • Season the dish:
    Drizzle the olive oil over the feta, tomatoes, and garlic. Sprinkle with oregano, red pepper flakes (if using), and a pinch of salt and pepper. Toss the tomatoes gently to coat.
  • Bake:
    Place the dish in the oven and bake for 30–35 minutes, or until the tomatoes are bursting and slightly caramelized, and the feta is soft and golden.
  • Cook the pasta:
    While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.
  • Mix the sauce:
    Remove the baking dish from the oven. Use a fork to mash the feta and tomatoes together, creating a creamy sauce. Add the cooked pasta and toss until fully coated. If the sauce is too thick, stir in a bit of the reserved pasta water.
  • Finish and serve:
    Stir in the fresh basil, adjust seasoning if needed, and serve immediately.
